Why this one
White text on a photograph is unreadable wherever the photograph is light. An outline or a shadow is what fixes it, and most simple tools omit both.
Text goes where the image has room for it, which is different in every photograph, so placement is dragged rather than chosen from nine preset slots.
Text rendered into the pixels shows up in every context, including previews and platforms that strip anything clever.
The short version
Putting words on a picture looks trivial and fails constantly, almost always for the same reason: light text over a light part of the photograph. The fix is not a bigger font, it is a stroke or a shadow that separates the letters from whatever is behind them, which is exactly what subtitles have done for decades.
Questions
Add a stroke in the opposite colour, or a soft drop shadow, or both. A dark outline around white text is the single most reliable fix and is why subtitles are drawn that way.
Large enough to read in a feed thumbnail, which is far larger than it needs to be at full size. If it is legible at a quarter of the width, it will work.
Not here. The available fonts render consistently across devices, which avoids the failure where a missing font is silently substituted and the layout changes.
It scales like any other pixel content, so it softens when enlarged. Add text at the final size, as the last step, rather than before resizing.
